It might be that the initial part is the “authorization” that ensures there is enough room on the card to pay what you pump. They have to go higher since it’s not known beforehand how much you will get. The last part is the “capture” which settles up based on what you actually bought. I *think* an eating joint authorizes the total before tips and captures the total amount later after the tip is known. I also *think* that most places settle these transactions in “batches” in the evening at some point. Ours at work (mostly business to business) settles at 8 or 9 pm.
