2nd time trying my hand at etouffee. Turned out great ! Much better than my gumbo earlier this week... Pretty simple recipe. Browned a rue to about the color of peanut butter then added trinity and hot rotel ,rendered down slightly then added chicken stock slowly. Added crawfish ,old bay and hot sauce towards the end. Garnished with parsley and tosted French bread.
