Whole birds on the egg will not dry out but breasts will, you need water. Brine and season breasts. Set a large roasting pan directly on the grill, no place setter, put V rack in pan then fill with water to about an inch above bottom of V. You will need to smash a beer can to the correct height in order to give support for two breasts on the V rack. Add a cut up onion or two, some old celery tops, enough red potatoes for the meal and what ever seasoning to the water you want. Light fire half hour ahead of time. Leaving the bottom damper open a half inch and butterfly open a quarter inch will give you around a 325 cooking temp. 350 on breasts is too high imo. Add water as needed.
