a week or so ago, my girlfriend's mother gave me an old handwritten recipe for pound cake in a cast iron skillet ... been wanting to try this for a while; we made it up yesterday ... Mrs Grissett was a close family friend, and this is how she made pound cake for them for years & years ... a few side-notes - i made my own cake flour in this recipe by scooping a healthy cup of all-purpose flour, and then adding 2 tablespoons cornstarch & sifting it all together into the mixing bowl ... 2 sticks of unsalted butter = 1 cup butter; i melted it in the microwave ... i also "greased" this #6 Griswold skillet with Baker's Joy ... everything was done with a cold skillet, too -- nothing was pre-heated ... i also hand-mixed/beat all the ingredients together -- the old-school way ... it turned out fantastic! we will be making more pound cakes in the future ...
