Regiment, superstition, and sometimes strategy.
Depending on who is delivering the pitch, priority may be given to any one of those factors at any point during an at bat. Some pitchers like to keep a higher frequency of pitches; slowing that down by making adjustments, or implementing "superstitious" actions can mess his regiment up and therefore his pitches, potentially allowing a good hit.
