All it is is vegetables that are fermented with lactic acid bacteria. The same kind of bacteria that lives in your gut and helps you digest things such as milk. It's the same stuff that's in:

Sauerkraut
Buttermilk
Yogurt
Sourdough bread
Soy sauce
etc...
