You could use that same argument to say that one ton of lime per acre, which works out to .045lbs per square foot, wouldn't change the chemical composition of tens of thousands of pounds of dirt either.

If you can put ag lime out in bulk it is with out a doubt the cheapest and best method, but for a lot of food plotters it is a lot easier and more practical to put out liquid.

Both methods will achieve the same results, and they each have their own strengths and weeknesses.
