I think it tastes much better to fillet the meat off both sides instead of cutting the whole snake into chunks. Fillet it off and you are left with 2 long strips of white meat and no bones. I've always cut it into short strips and fried it, but I suppose you could cook it any way.
The good thing about filleting it is nobody has any idea what they are eating unless you tell them. And everybody likes it if you don't tell them what it is
