I just got started on processing one that I shot last weekend. It was a 75# doe on the hoof. I have 18.5# of total meat including backstraps. 15.3# of bulk meat after I fully deboned both hindquarters, shoulders, and a little neck meat. Tye backstraps were 3.2# total. I didn't get the inner loins because I didn't drop tje guts. Didn't clean any rib meat or other scraps from the flanks. The total yield of bulk meat the way I clean them is about 25% the total live weight.
