Was emailing a food writer pal who was asking about hushpuppies.

Dad used to make 'em with yellow corn meal, a little buttermilk (or whole, if we didn't have the other), a bit of salt, and some chopped onion. Mix together so it was thick but not runny. If it was runny it had too much milk and wouldn't hold together in the oil.

I've had 'em all over, with jalops and Cajun seasoning and the "soft" kind like cake (which sucked). Have seen some recipes for weird stuff like adding applesauce.

How do y'all make hushpuppies?

A little oil in the mix makes all the difference in the world to me in cornbread or hushpuppies.

I use bacon grease instead of regular oil. It helps give them a good flavor.

Corn meal, eggs, oil, lots of onion to make the mix. What I like is to add a lot of onion powder into the mix. I like the extra onion flavor. I've also added peppers and cheese.

On a side note salmon balls are great too. Just use as little flour as necessary to get the egg and salmon mixture to stay together. Use lots of onion, pepper jack cheese, and onion powder.
