Probably like many of you around or over the age of 50 - your grandparents didn't waste a thing in regards to edible food. When my grandparents slaughtered the hogs in the fall, it was always a family event. Very little went to waste. I can remember my grandma sqeezing, running, and slinging the crap out of those things - then cooking up a big batch of them for the family. You would have thought she had prepared a prime rib dinner with a loaded baked potato the way everyone carried on.
I wouldn't eat those chit soaked guts when I was young and hungry, much less now that I can afford a ham sandwich.

The town of Arley up by Smith Lake used to have an annual Chittlin Festival... They said that back in the old days they would pull the chittlins behind a boat to clean them out...
