Many.....many folks don't realize there's a BIG chunk of really rich meat under that head. I've gone to some of the Docks when Charters are coming in and gotten all I care to clean. The Deck hands cleaning fish ain't gonna fool with them.

AKA: Collars

Try Tuna collars discarded off the black fins and yellowfin’s at the docks, too.

The bigger ones, you can smoke like chicken.

Collars/throats, bellies, and roe are some fantastic big saltwater fish parts that get ignored a LOT.

Fried speckled trout roe might be one of my favorites.

Those big 20lb plus snapper also have a good think of meat above their nose. We used to cut them out as well. We called them fish fingers. They are delicious fried up.

Grouper cheeks are good too
