Tell you what I do for beef stew meat, I fry up some deer or beef cube steak, then slice it up and add it to the stew. I don’t coat it heavily with flour, just enough to stick and it thickens the stew. No egg wash at all. Yours look delicious BtW!

Awesome bowl of stew !
I got a pro tip for a great beef stew seasoning base I tried recently. 1 pack Au jus seasoning and 1 pack brown gravy mix. It works good Do you just put those and water or do you still use beef broth?

Here is the recipe I used, I changed it but this captures my changes
Beef Stew
Ingredients * 1.5 pound stew meat * 1 teaspoon salt * 1 teaspoon pepper * 2 tablespoons olive oil, divided * 1 small onion, diced * 2.5 cloves garlic, minced * 4 ounces tomato paste * 32 ounces water * 4 beef bouillon cubes * 1 tablespoon worcestershire sauce * 1.5 pounds yukon gold potatoes, cubed * 4 carrots, sliced into discs * 2 stalks of celery chopped * 1 tablespoon fresh parsley, chopped * 1/4 cup flour
Instructions * Coat beef with flour and season with salt and pepper. In a stock pot over medium-high heat, add 1 tablespoon of olive oil. Once heated, add cubed stew meat. Sear on all sides. If needed, sear meat in two batches - do not overcrowd the pan. Remove beef and set aside.
* Put 32 ounces of water and bullion cubes into a separate pot and bring to boil. Add tomato paste and whisk to combine.
* Reduce heat to medium. Add 1 tablespoon of olive oil to stock pot. Add diced onion and cook for 2 minutes. Add garlic and cook for 1 additional minute. Then, add beef bouillon mixture and worcestershire sauce. Using a whisk, scrape the bottom of the pan to deglaze and incorporate any browned bits into the broth.
* Add beef, carrots and celery back to pot. Bring to a boil. Cover, reduce heat to low, and simmer for about 60 minutes (or until beef is tender).
* Add cubed potatoes. Cover and simmer for about 20-25 minutes, or until potatoes can easily be pierced with a fork.
* Uncover and remove from heat. If you'd like a thinner stew, add more beef broth as desired. Top with fresh parsley and serve immediately.

I made a venison stew the other night in our new instant pot. I forgot to take any pictures but it was awesome and really easy.
I cut up and well seasoned venison into big chunks, set pot to saute and quickly browned them. Then added my onions, potatoes, carrots, and added 2 cups beef broth and 1/2 can tomato paste.
Pressure cooked for an hour and it was perfect.
I love my country, but don't trust my government.

Idk what kinda powdered gravy these mom and pop places do Hamburger steaks in, but I love the flavor. It would make an awesome base for beef stew. What’s a good packaged gravy mix? For soups and stews ?

I've always done it in the house, not much different than making a roux (just don't have all the oil) if it really starts to smoke it's burning, and ya might as well start over. But you might wanna practice outside 😁
