Anybody used deer sausage by itself in a sausage ball recipe? I have a lot of hot sausage I need to cook up.

May try that. I added some sharp cheddar to them and that gave it a good taste. The sausage is still just about too hot for my taste but I’m not gonna waist it. Due to food allergies I made some with a “vegan” pancake mix, with maple jimmy dean sausage and that was really good.

I made some for work last night and used Italian sausage, the cheddar bay biscuit mix, mozzarella, cheddar, and parmesan cheese, some italian seasoning, black pepper, a pinch of red pepper flakes and some chopped scallions. They were very good. Served them with some pizza sauce and parmesan cheese to dip them in.

Throw in a package of cream cheese, will fix the dry problem. Also will clump together easier.
