For those without a walk-in cooler. I've been quartering and "aging" my quarters in the fridge for a week before deboning. It worked on great on the last doe, hope I should get the same on the one I deboned tonight. I am reading that a deer can be aged in the fridge for 2 or 3 weeks. Do you age bucks longer?

I hang them for 2 to 3 weeks with the hide off.

I won’t use a processor who doesn’t hang for at least 7-10 days.

When I used to have access to a walk in cooler, 2 weeks. Hide on. Having the hide on just seemed to cut down on amount of trimming dried out meat

What I did was quarter or cut to up to where it would fit in my stainless steel pots cover it with water and added salt. Then left it in a fridge just above freezeing for three days then put it in the freezer over the two days .

I'd cut it up , washed it good and straight to the freezer. When I cooked it id soak it salted water over night and cooked it

They obviously don't have the fat content of beef. In my experience, 3-4 days is sufficient. I haven't been able to hang one in a long time, but dry aged deer meat is incredible.

Now for y'all meat soakers, soak em for 3 days to 3 months. You're ruining the meat anyway, so the time doesn't matter.

I put it in a cooler on ice for 7-8 days constantly draining, if that counts. Drains off a lot of the blood and works for us.

Ive never dry aged a deer, but last few years i will wet age a few back straps. Definitely improves the tenderness.
