The straightness tolerance is how close it goes back to Normal straightness after being bent. The grain difference is the amount of error in the weight calculation. I would stay away from the super cheap ones for Hunting, but don't think you necisarrly need the pro shaft for Hunting either. Just my .02 though.

Actually the straightness rating is how close the shaft is to being perfectly straight. Average shafts have a +/- .006" per 28". The weight tolerance is the difference in weight per dozen shafts. Most people don't shoot well enough to notice .006" difference in straightness or 5gr. worth of weight difference regardless of what they say. I know I don't. But, you have to throw in the confidence factor.
When I buy carbon shafts, I pull the nocks out and cut 2" off the rear of the shaft. I then reinstall the nocks and cut them to length. Doing this will take most shafts from +/- .006" straightness to .003" or better. The most important thing to look for in an arrow shaft actually isn't listed. That's consistent spine. As most of you know, your arrow flexes when it leaves the bow. A finger shooters arrow will flex left & right. A release shooters arrow will flex up & down. This is called archer's paradox. If this is inconsistent, your groups will be also.

I would go with the first one. The minimum bolt weight listed in your owner's manual is for total weight, that includes point / broadhead weight. Both of those choices you listed come with 125gr. points. Total weight for both listed are 542.6 grains.

Weigh them. The ones that came with your's most likely weigh more than 425gr. The 425gr. is the minimum weight you can safely shoot out of your crossbow, not the actual weight of the bolts that came with it.
