My oldest started her senior year this morning. We asked her to pick what she wanted for dinner last night. She chose chicken on a stick. I marinated some chicken breast chunks in pickle juice for a couple of three hours. Then threaded the chicken chunks, dill pickle chunks, and onion slices on a skewer. Gave them an egg wash and rolled in flower and then a dunk in the deep fryer. Very tastey.

I have to cook it in batches. So, I have to grab my serving early or else there won't be any left by the time I finish cooking it all.

The chicken has a chic-fil-a taste to it, if that makes sense. Also, don't marinate too long or the chicken will start to get hard around the edges. I guess it is sort of cooking in the pickle juice.

Good stuff right there!

CFA does use pickle flavoring in thier chicken. Learned that several years ago.
