snakebit OP 10 point Joined: Jul 2016 Posts: 2,502 Earth	1.5 to 2 pounds of chicken cut bite size and seasoned with salt pepper and taco seasoning. Cook until done in a skillet and remove it. In that same skillet 4 cups chicken broth and 4 oz tomato paste. Once paste dissolves by stirring add 4 cups minute rice and season with taco seasoning, cumin, garlic powder and black pepper. Once the rice has simmered to done add back the chicken and pour the queso over the top. I just bought the Gordos cheese dip from the walmarts. I would say this is the basics change and add how you would want. Onions and bell peppers would be good sauteed with the chicken and added back maybe tomatoes too. Add a little Crema when served would be good too. If you want a good queso recipe though 1 pound pepper jack 1 pound white american 1 diced jalapeno 2 cans evaporated milk (12 oz cans i believe) "Hate is an acid that does more damage to the vessel in which it is stored, than the victim on which it is poured."
