Looks very professional but I gotta ask. What are the two light colored cuts in the back pan on the right. I feel like I already know but just curious. Those there are the Rocky Mountain oysters. Tried them last year and they come with me out of the woods every time. I’ve got a small pile to grind from this deer, still have some from last year. The rest of the smaller pieces and smaller roasts have been cut into medium cubes, going in the pressure canner tonight. If you haven’t tried canning some deer it is totally worth your time. Everything is vacuum sealed and in the fridge to rest tonight - on to the freezer tomorrow. Canning is waiting until dark, I’m sitting in the woods seeing if I can catch a yote going to the gut pile.
