I’ve been wanting to try canning some sweet corn but wasn’t to sure how to do it. After some research and watching some YouTube videos, I decided to try a little bit. I did 9 pints and it looks like they turned out ok. I guess the next thing is to see how they taste in a few days. If it’s good I’m gonna do lots of it this way. [Linked Image]

Put the corn in the jars leaving a 1” headspace. Fill jars with boiling water and debubble. Pressure can at 11psi for 55 mins. Some people will put a half of a teaspoon of kosher salt per jar. I skipped this step because it’s sweet corn and I didn’t want salt in it. It’s way easier then I thought it would be.

DEFINETLEY peaked my interest.. Is the pressurizing necessary or can it be bypassed?

I also cook it down with Rotel(diced tomatoes) and onions. I then package it in pint bags and vacuum seal them. After I seal them I flatten out the packs and stack real good in the freezer. You just take the pack out and put it 3 minutes in the microwave and it steams it perfect and ready to eat. Also use your wife’s bunt pan to cut in. Works good. So the end result when you pour it out of the jarr, is it more like nibblets corn (canned stuff) or fried corn? We freeze all of ours, but if we could can some that would end up with more firmness like nibblets corn that would be great. I have a TON of corn planted this year, with a little rain we will be overflowing!

We put up 77# of cream corn friday and canned 24 quarts Saturday. Been giving a bunch away to friends and family. Very pleased with the ambrosia sweet corn I planted this year.

That corn was only rained on 3 times. If it wasn't for the 7" we got a few weeks ago it would have burnt up with the heat we've had the last 2 weeks. Just got 3" which is right on time for my watermelons.

What kind of vacuum sealer do you have? From the bags I'm guessing a chamber vacuum sealer. I've been wanting to get one of those but I don't know if any of the cheaper ones are any good.

I have a Vacmaster external sealer and a smaller chamber sealer. I mainly use the chamber for corn, shrimp and any other things that may have moisture in it. The external will pull moisture out the bag. That sweet corn juice is not good for the little magnetic plungers that makes the machine work. I’ll get a link to the small chamber sealer we have.

Thanks! I have issues with trying to seal anything moist. I've owned 3 different counter top machines. I want a chamber vac sealer.

This is the chamber sealer we have. Been using it for 2 years now and no issues. Does a really good job with moisture. It’s also lite and doesn’t take up much room on the storage shelves. Bags are cheap also. We use the heck out both our sealers.
