I made fresh salsa with pineapple, mango, lime juice, jalapeño pepper, cilantro and red onion. Put in fridge to marry a bit. This is soooo good. Whipped up some homemade avocado rice with toasted white rice, onion, garlic, salt, pepper, chicken broth, saffron and avocados. Toasted rice with onion and garlic. Saffron getting happy. Plated with grilled swordfish seasoned with kosher salt, fresh cracked black pepper and a drizzle of lemon butter.
