Did a Grade A Prime Top Sirloin from Costco last night. Heavy coarse salt and cracked pepper on all sides. Let it get up to room temp while taters cooked. Didn't feel like fooling with the BGE so I turned the gas grill on wide open and let it go to around 600 and laid that puppy on there until it would release from the grates, flipped it and did the same thing on other side. Once it let go from the grates I turned down to low and let cook for another 10-15 min. Let it rest for about 10min. and split it with wife with fully loaded taters and a salad. Had a couple of glasses of Merlot and thought we was somebody special.
I've learned you have to go to a medium rare with that particular cut of meat to get it tender. I'm a rare - medium rare guy, but that cut likes to be cooked a little longer especially as thick as they are to get really tender.

Checked them out if you go in a Costco, alot cheaper than filets or rib-eyes that are only a Choice grade.

Learned about them when we went to Argentina a few years back.
Owner of the lodge had feed us two nights before a great meal of tenderloin cooked over a open wood fire, came in a couple of days later and said we had a treat for dinner - Top Sirloin!
Wife, son, and daughter all looked at me after he walked out like huh? Treat?
Then he explained the Grade A Prime vs. Choice..wow who'd a thunk a piece of sirloin would be better than a filet. Not me. But I've been buying them ever since when they have them on special.
