How big of an area is this? I would say that all together it's going to be a little over an acre or maybe 2 acres at the most. I would take a picture from the top deck, but visibility is about 10' up here right now.

Japanese persimmon. I have some that produce a good crop and they don’t get very tall. Deer like em and I do too! Not sure what your “main” plant or grass should be. I’m curious to see where this goes because I’d like some low maintenance plantings as well. Side note: I have plenty of kudzu that you are welcome to if that’s the route you take. It’s free!!
Don't blame me for your bad decision-

There is 2 different high fence. 1 small and one big! Mine was free range in the big pen and was not a breeder buck. Why does it have to be twisted around??

No throw and mow recommendation has been mentioned yet? I’m speechless.. That’s what you can do with Fescue. The mulch will help hold down weeds and woody for a little while. There will be enough soil disturbance to get Fescue and some clovers to come up. Keep it mowed, fertilize it some, add a little seed to areas that need it the next Fall. I’d do KY31F, arrow leaf or crimson, and some white variety of clover to start.

Ryegrass would be easy to establish and the deer would like it, but it will die out with hot weather. Fescue will live year round, but not very attractive to deer. Yeah - with rye, I wouldn’t do ryegrass. I put Elbon rye on my backyard this year to build the soil a little. Kid traffic during the summer is rough.

Plant in fescue and overseer in fall with ryegrass and could even mix in a couple pounds of crimson clover.

If it’s got a little shade from the trees you’re leaving, I’d think about adding some azaleas, make it pretty and parklike.
