Remember the beef pot roast we made Saturday night? This is what you do with your left over pot roast and mashed potatoes...
I preheated the oven to 350. Then I took the pot roast and chopped it, the carrots and onions up a little finer and put it in a lightly oiled baking dish and added English peas. I stuck that in the oven for a few minutes to warm up while I took the leftover mashed potatoes and added about 1/4 cup of flour, 1/2 cup of shredded cheddar, some parsley, an egg and a little milk and stirred it all up. I then took about 1 heaping teaspoon of corn starch and mixed it with a little water for form a slurry.
I pulled out the warmed and diced pot roast and mixed in the thickening agent before topping the whole thing with all the potato mixture. then I tossed the dish in the oven for about 35 minutes. Then I turned on the broiler for about 5 minutes to brown the top.
Then I pulled the whole thing out to rest for a minute or two before serving. Serious comfort food, I could have honestly eaten the whole pan.
