Well then check out this video. Jacques Pepin (Pronounced pay-pan) is one of the greatest chefs of all time. Winner of 24 (Yes 24) James Beard awards. Mrs. Irish and I stumbled upon this video surfing YouTube and couldn't believe something like this was available for free on the internet.

He covers everything from butchering animals to French butter pastry. It's over 3 hours long, so you'll have to watch it in stages, but I've been cooking for a long time and I learned so much stuff just chilling out and watching this video.

If you watch some of this guy's other stuff he seems like a great family man and just an all around good dude too.

The thing I like about him, is he doesn't get too fancy with his food. Just good solid country style French food with minimal spices, and he really lets the food itself give the flavors.

I would be interested for some of the others on here that enjoy cooking to watch it and give your comments.

Watch him every chance I get. They had a party for his 80th last year I believe. Several well know chefs were cooking.
