the crispy edge is from frying the burger in oil...bacon oil is best!!! if you watch the guy working the flat top or cast iron skillet, they're constantly spooning the grease over the burger. the edges are the thinnest and the crags help make it crispy (little pieces sticking out when smashed instead of a uniform edge)

The closest Freddy's to my house is about 50 miles away so I don't get to eat there very often, but I like everything I have tried so far. Their Concretes alone are almost worth the drive.
