I kept seeing people post this smoked queso on the Big Greem Egg Facebook page so I decided to give it a try. I had a vac sealed pack of sliced brisket in the freezer that I decided to throw in there as well. It was some count thumbup

There are several different versions of this going around and I really just took some ideas from several of them. I used a block of velveta and I had some cheddar and Colby jack already so I threw it in there too. What you see in the pic is minced garlic, onion, jalapeño, tomato, cilantro, cream of mushroom, and a can of green chili’s. When I do it again, I probably won’t add the cilantro. It was good, but I think it was a little overpowering in the cheese.

It’s called an adjustable rig. You can get them from the ceramic grill online store. You can configure it multiple ways. It’s a must have in my opinion.

I tried it yesterday too. I agree the Velveeta was a little heavy. Next time I'll mix in some cotija. I'll also do at least another pound of sausage

I had 1 red onion, 3 poblanos, 5 Tabascos, 1lb of tennessee pride sausage cooked, 1 block of cream cheese, half a jar of salsa, a block and a half of velveeta, half a bag of cheddar, and half a bag of Mexican cheese.

Yes, they aren’t cheap, but they’re made well. Hopefully they will last a long time. I use Killer Hog’s AP rub and Killer Hog’s Hot BBQ Rub together on the wings. I usually go around 275° for 1.5-2 hours usually. Sometimes I’ll flash fry them to get the skin really crispy.

I made the cheese dip yesterday. It was good but here is what I would do different. I left out the cilantro per the prior recommendations. I used ground beef (next time I’ll add some taco seasoning). I did fire roasted rotel. I had a block of cheddar, Monterey Jack, and a big block of velveta queso. Doing it next time I’ll leave the cheddar out it don’t melt right. I had everything else from the original recipe. It was great just the cheddar didn’t melt right and that’s my fault.
