Does anyone have any good homemade tomato gravy recipes? I have more tomatoes than I can deal with and have never made tomato gravy before.

I do mine the same as Irish, but I chop up 3-4 strips of bacon and cook that up real good in the cast iron pan and then just add my flour right into that and then it's the same. That way I got some bacon pieces in it.

Use rotel tomatoes in a basic white gravy. Add a sprinkle of Tony's for good measure. Went all in earlier this week and used fresh tomatoes and peppers out of the garden. It was a little more work prep wise, but worth it. Had cheese grits, bacon, scrambled cheese eggs, and homemade biscuits with it.
