While I don’t prefer red snapper myself, if I’m eating fish I want to taste fish. I can’t wrap my mind around wanting to hide the fish flavor with spice. I don’t know where the line is between spice as a compliment to the dish versus overwhelming the dish, it’s probably different for everyone. But blackened is so strong...
