Do not use them! My FIL and I used them this season and couldn't be more unhappy about it. I dropped a deer off in January and got smoked sausage and snack stick only to find out they weren't even completely smoked. When I called and told him he said "that's how we do our sticks. they come out soft". So i said screw it and kept them and sous vide them to the correct temp. My FIL dropped one off in February at the end of the season and told the guy to take his time and do it right. He touched base with the guy after a few weeks and the deer still wasn't ready. He then contacted him in mid march or so and the guy told them he had to shut down do to the China Virus and he had to throw that deer out. So, If you want your deer meat done or even back at all do not use this guy!

I would be very happy they threw the meat out of there was potential contamination.

It wasn't contamination. At least he didn't say it was. If it was, I'd rather hear that then "you're not getting your deer back do to the virus".

Over the years i have tried many meat processors. The best i have ever used is Stump Creek in Alford, Florida. The best Hands down! they do not dress the deer, but you can bring it to them in a cooler. It is the best, and worth the drive to take at least one down there every year. awesome snack sticks, and smoked sausage. They have a large menu, even Bacon.
