I would brine it prior to grilling. I use an herb and garlic marinade off the shelf.

Roll in brown sugar, wrap in bacon and dip in honey. Hot grill about 3 mins on each side.

I brine mine over night. I mix up melted butter,garlic,creole and lemon juice and inject it. Grill it to 165.

I like to cut it into cubes. I'll put in a gallon bag and shake some Bad Byrons butt rub on it. Wrap each with a piece of bacon and grille till turkey and back are done. Seems to be a hit with the folks as there is never any left.

Hmm, you've got me thinking - I'm home today doing a honey do list and not hunting - I have some thawed out for supper --- I was going to fry it, but may grill it --- This was an old turkey and even frying part of it the other day it was a little tough. I sure don't want grilling it to make it tougher.

Grilled mine, marinated for short time in dales, used some Italian seasoning, creole, salt, and pepper.. turned out right....
