Considering that folks are trapped at home, a Crok-Pot makes food that feeds folks all day long and doesn't waste much if any. Post the recipes up.

chicken enchilada soup:

1 can fire roasted diced tomatoes
1 can Hatch green chili’s
1 can rinsed black beans
1 can chicken broth (i pour broth from a big container into one of the empty cans)
1 package verde/green enchilada sauce (Fontana is what i use)
2-3 big chicken breasts on top - dust with Cumin good on top

cook on Low for 6 hrs - remove breasts & shred into a pot with melted cream cheese & add back into crock-pot/soup, stir, and serve with tortilla chips

we also sprinkle Mexican cheese on top
