I must say, I make a pretty mean pot of chili. Over the top smoked chili on big green egg. Look it up and give it a try, you won’t be sorry

Regular chili....definitely beans! I prefer kidney beans but like all types.
Hot dog chili....no beans....chili needs to be pretty thick too or everything gets too soggy. Good hot dog chili is an overlooked art.
Texas chili.....if done correctly if fantastic and doesn't need beans....chunks of meat (preferably smoked), tomatoes,peppers and onions....thick rich slow cooked chili roux so to speak. MMMM Good. But I ain't got no problem with adding beans too.

I've had the misfortune of spending way too much time in Texas and ain't found one single reason to go back.
Of course I've had the misfortune of the life sentence in Alabama as well. But at least I got that from being a demon in a previous life.
