Cut backstraps in 6" lengths. "roll" it out. Make a cut in the side of it 1/4-1/2" thick, cut all the way across it to within a half inch or so from the other side, flip it open, then make an even cut down the middle and just make the backstrap into a sheet. Much like a cinnamon roll is. Put it or them in a ziplock bag overnight with some whore's chester sauce in it. Next evening, take them out, spread them on a plate, put cut up onions in the middle, and cream cheese on the outside wings. Fold the wings over, wrap them in bacon, wrap in tinfoil and put in a meatloaf pan in the oven at 360 for an hour. Then take out and flip it over, cut the oven off, put it back in the oven till it gets to eating temp. Should take 15 minutes. Bout to post pics.
