I used to when I first started hunting because that is what I was taught to do. Then, my roommate in college said he didn't get the whole "cutting the throat" thing. He said don't they loose all the blood when you field dress them? I guess I had never thought about it and stopped doing it.

Wait, some of y'all cut a deer's throat after it's dead? Only reason I've ever heard of cutting a throat was to actually dispatch the animal.

It used to be common on ones that were already dead, at least when and where I grew up, not so much any more. I think it came more from the way slaughter houses/people who would butcher animals and hang them up and cut their throats immediately and let them bleed, but that is just a guess.

It used to be common practice around our place with hogs, after a .22 to the brain. Never did it with deer.

if you don't immediately cut the balls off a buck, the meat'll spoil, too ...

I remember one time in the late 70's a young guy killed a nice 8 point up at Clayton. We got back at the camp and a old guy walked over, took out his pocket knife and cut the throat all the way around. Ruined any chance of using the cape. Stupid thing to do.

Kosher food is the same way. I honestly dont see the point if the heart isnt beating its not going to bleed out any better than it will when you hang it and cut the head off after skinning

Write this down, so I don't forget.

1. Shoot deer with .270 so it will still be alive when and if I find it
2. Cut throat with hack saw or stab with knife and root around for the jugular
3. Cut tarsals and testicles off
4 Have cooler of ice with no drain stopper, 575 dozen arras, cald
5 Soak meat on ice in cooler for 5-75 days until gray to the bone.

So I have a few questions. At what point do I gut/skin it. Do I need to get the brain out to tan the hide? Should I hang it by the neck to clean it? Who do I send the photos of the pulled jawbone to so they can verify the age? How do you cook the heart, liver, and tongue?
Will it be ok to fill the cooler with Dales', Moores, or Italian Dressing or will that affect the meat graying process? I also heard I had to cook the meat well done to kill the Trichinella.

"How do you cook the heart?"...............seriously? You don't cook it. You pull it out and chomp straight into it like a real man.
