I know this is hard to believe but we had some smoked brisket left over. About 1.5 pounds of cooked brisket. So since the weather has cooled off I wanted to make some chili up at the cabin today. I did a bunch of tractor work for a couple of friends and then split a bunch of firewood, so i was hungry. Brisket chopped Fresh Garlic Onions Fire roasted tomatoes Mrs. Irish's roasted poblano peppers Red pepper flakes Brown sugar Salt Pepper Cumin Chili powder Beef broth Chili beans Black beans Cornmeal to thicken Started chopping... Mrs. Irish roasting the poblano peppers We added the meat, and vegetables and seasonings to the pot with a little beef broth and let all that simmer for about 30 minutes before adding the tomatoes and beans and then let it all cook together for about an hour or so... We served it with some cheese and cornbread... The smokiness of the beef and the poblano peppers really made it different and more tasty than regular chili that we have made.

Good eats.
I love all chili but my favorite has a base of a big chuck roast, rubbed with chili powder and garlic and salt, smoked and then cubed up to start the base. Nothing like a good smokey meat as a base.

Man that sounds good. I keep meaning to smoke a beef roast. Maybe next weekend. I wonder what roast is best? I'll start another thread.

I bet you would do well in a chili cook off with that recipe I came in second place at my company cook off with my Chocolate Chipotle Chili. We made some Friday night with Grass fed beef, roasted poblano peppers and hominy in it and it was some of the better I have made in a while.
