Eatin' pretty good up here so far this weekend...

Mrs. Irish made us one of her big salads Thursday night with smoked chicken and Alabama caviar.

Organic grass fed beef, rice, garlic, oregano, salt, pepper, bread crumbs, egg and Parmesan cheese. Mix it all up like you would a meat loaf, stuff and roll. I slightly boiled the cabbage to soften the leaves. Then we topped with a tomato sauce and mozzarella cheese and baked at 350 for about 30 minutes.

That sounds great. You know I’m gonna mess it up and convert it to low carb though.
