Are the bomb

One can of salmon
2 eggs
1 cup of crushed unseasoned pork skins
1/2 cup of chopped celery
1 t Onion powder
1/2 t Garlic powder
1/4 t salt
Mix together well and pan fry in peanut oil

FYI, I donโ€™t measure anything so those are approximations.

I did the low carb/no carb diet a few years ago. Crushed pork skins make anything good. Just throw them in a ziploc bag and crush them up with a rubber mallet. Makes a perfect breading for fried pork chops or chicken or cubed steak. They actually taste better to me than using flour for breading.

Tried a little different recipe tonight. I like these better.

I used almond flour to absorb the egg and moisture from the salmon.
I didn't use celery.
I used the smallest amount of Old Bay and Cavanders Greek Seasoning on them after they were cooked. Just a light sprinkle

Boy howdy these are good.

I opened this thread yesterday morning. I'm glad I did because I decided I had to have salmon patties for breakfast. Made some cheese eggs to go along with them. Lort, they were good.
