The thread asking for cast iron Dutch oven recipes prompted me to dig up the last time I done this and post. It’s been over 2 years since I’ve ate “real” beans but I wanted to dig it up for those of y’all who are “carbnivours”. Get big green egg or similar lit and heading to 225 degrees. Chop 2 bell peppers and 2 small to medium onions. Prepare a meat log of pork breakfast sausage and ground beef, about 1-1.25 pounds of each. Plate setter legs up, place the cast iron Dutch oven directly on the plate setter. Toss in your onion, bell pepper, and 2 cans dark red chili beans (kidney beans) and 2 cans diced tomatoes. For seasoning I added a Carroll Shelby chili kit. Stir it all up nice. Now set your grill directly on the Dutch oven. Set the meat log on top of the grill so the grease will drip into your pan. It will look a little tall but if your egg is a large or bigger it will shut. Smoke it. When done tear up your meat log and stir it in. As variants I sometimes will add ketchup, mustard, bbq sauce or syrup. If you are doing low carb just look up my low carb chili recipe here and cook it on the smoker instead. bank of baroda atm locatorpicture uploading websites

I do something similar but use a chuck roast rubbed with garlic, salt and chili powder. Then cut up roast into bit size chunks after smoked.

i got my hands on a vintage Lodge dutch oven & have it in my e-tank getting spic-and-span clean -- hopefully it's done when i get home so i can season it up, and try this recipe out this wkend ... personally, i'm a fan of the Wick Fowler's 2 Alarm seasoning kit, so i'll prob roll w/that ... the idea of smoked sausage/burger in the chili sounds freakin' awesome!

here's my take on this recipe -- had 1 lb of venison breakfast sausage i'd made myself & mixed that in with 1 lb hamburger to create the meat log -- instead of putting the DO inside my grill, i just put a #6 skillet to catch all the drippings & prepared my chili on the stovetop ... after 2 hours on the grill, i pulled & shredded the meat log & dumped into the chili along with some of the drippings caught in the skillet (discarded the pinkish looking stuff) -- brought it all up to temp, and served ... i used the Wick Fowler's 2 Alarm kit & left out the red pepper ('cause my daughters are lightweights about spicy food) my daughter had the best description -- "my mind can't make itself up what it's eating -- i think it's chili, but then i eat the meat & think it's BBQ" excellent stuff, Darrylcom - thx again for sharing!
