Made this tonight and it was really good.
Grilled it slow and low. About an 1:15 minutes. It was juicy and delicious. I used cheap bacon and hammered it thin and used 3 pieces per breast. It completely covered the chicken and and all he cheese stayed inside.

Did this with deer tenderloin last night with good results. Smoked it on hickory and apple until 110. Then, seared it on direct heat until the bacon crisped up.
