Went to visit family in Mobile this past weekend, so I had to bring up fresh gulf shrimp.

Start boil 3 cups of water and 1 cup half and half, sprinkle of salt, and 1 teaspoon crab boil
Add 1 cup stone ground grits and cook for 15ish minutes, stirring occasionally
Cook 6 strips of bacon-diced
Remove bacon from pan
Cook shrimp in bacon drippings with Cajun seasoning
Remove shrimp and add 1/2 cup chopped onion, cook until soft
Add 3 tablespoons corn starch and stir until mixed with bacon drippings and onion
Add 1 1/2 chicken stock and stir until mixed
Add 1 cup half and half and stir til mixed
Bring to a simmer and add shrimp, along with 1 tablespoon Cajun seasoning
Sauce should be thick so cut off the heat
Mix 2 tablespoons butter and 1 cup cheddar cheese into grits and mix
Serve shrimp mixture over grits with bacon and green onions to top

That looks good. I've got to try it. I'm thinking some smoked sausage or andouille would be good in the sauce.
