I went check the beets today. They are starting to have little beets showing. They are about an inch round from what I can see. If I wanted to pull them to pickle, how big should I let them get? Varieties are Bulls Blood and Detroit dark red.

No expert but I always liked about 2 - 2 1/2 inches give or take a little sliced.

My wife buys pickled beets, they are about 2" diameter out of the jar.

I've never had any luck getting them to grow they get about as big as a nickel and that's it

I pulled a few beets out the garden to try my hand at pickling them.

I ended up with enough for 2 small jars and they are great. We almost have 1 jar gone already.

Never tried the beet greens but been reading good things about them. Gonna try some when I pull the next ones. I think a little bacon grease and some of my homemade Tasso would make that stuff mighty fine.
