I use the legs, thigh, wing meat for Turkey Gumbo. A lot of Hunters just pulls the breast and tosses the rest but i don't. They make for a great Gumbo or Turkey Dumplings....

There isn’t much meat there and they are stringy. The only thing I like to do with them is cook the meat off and use it for soup or turkey salad.

Run me through the preparation for turkey dumplings. My wife makes some fine chicken dumplings, what do you do different with the turkey legs. Power boil or just boil?

I like the thighs maybe more than the breasts. Veggie soup, dumplings, gumbo and casseroles. Best thing is when your hunting buddies remember you like them and offer you theirs.

I do keep the drumsticks, but they require a little additional work. Sometimes I'm not sure they are worth it, but I'm already wasting the back and wings so I got to have some standards.

This is the first year I have kept the legs and thighs, and I regret not doing it sooner.

We took the ones off one my boy killed earlier this season and seasoned them (rubbed) with taco seasoning, added sliced red onion, jalepenos, lime juice, minced garlic, and beef broth in a crockpot for 8 hours and made tacos. Not bad at all. You could do nearly the same thing and change the taco seasoning to a good bbq rub and then add sauce at the end and make dang good sammich meat.

It being his first bird and a nice one, I was going to mount it but he wanted to eat it (made me smile big) so I tried to use every bit of meat I could. Normally, I regret to say that I waste those parts more than I use them.

My wife used the recipe james posted to make dumplings, they were yummy. She did say she tweaked the recipe a bit but nevertheless they were awesome.
