I'm not so sure why I've had a craving for comfort/bar food this week, but it is what it is. I stopped by the Winn Dixie in Cahaba Heights on the way home the other day for some beer and they had all these fresh Italian meatballs marked down so I snatched them all up. I thought about spaghetti and meatballs, but this just sounded better.

I browned them in the skillet and then popped them in a 350 oven for about 20 minutes. Then I pulled them out, deglazed the pan with some cabernet, added some garlic, seasonings, some tomato sauce, simmered them on the stove, stirred them around a little and put them back in the oven for about 15 minutes. Then I sliced open some French bread and loaded it up with the meatballs and sauce, topped with shredded Parmesan cheese, some sliced Buffalo Mozzarella and put them back in the oven to melt the cheese.

I must say it was pretty damn good.

Yep. Provolone would have been good, but all we had was the Buffalo Mozzarella in the fridge. It was either that, cheddar or goat cheese.
