Okay dove season opens today. What are some of your favorite dove recipes? I love the wrapped in bacon with jalapeño marinated in zesty Italian. Any others you want to share?

Breast off the bone, a little Moores or light Dales, wrap with thin sliced bacon, place on skewers, hit the grill. A funny. When mydaughter was about 7-8 she had a friend over the same age. We had this for lunch one Saturday. Little gal at 13 pieces all the while saying she didn't like dove.

Pluck and draw whole bird. Rub with fat (olive oil, bacon fat, whatever you got) salt and pepper, stuff each bird with fresh herbs and a few grapes and grill. We just pick stuff growing, rosemary, sage thyme, bay leaf, whatever is still alive.
I can hurt myself eating those.

Haylie hunted her Chessy for first time. Dog did pretty good. Still learning, but did well for first hunt. We killed 14 and she picked up about 8-9.

I just breast them out. Wash them and pat dry. On the cavity on backside of the breast I put some cream cheese, a jalapeno slice, and sprinkle some sage. Wrap it in a half-strip of bacon and stick a toothpick through it (it pushes easily through the breast bone that splits the breast). Put on med hot grill for about 15-20 minutes until bacon is pretty done. Remove and let it cool just a few minutes. I like it medium rare but not bloody. I only killed six the other day. I grilled them Sunday night and they were delicious.
I like the idea of taking the meat off the bone first and wrapping them as described but I'm just not motivated enough to do that much work!

I split the jalepeno length wise and core it so essentially I have two halves, or “boats”. Fill each half with cream cheese, lay a marinated dove breast on top, sprinkle with southern flavor and wrap in bacon. Grill or bake...both are delicious. That’s the way to go. I do the same thing with duck when I’m cooking it for people who “don’t eat duck”.
