Sounds like an oxymoron doesn't it? Nope, almond flour. These are frickin awesome, especially if you're watching carbs.

1 cup + 2 tablespoons almond flour
1 teaspoon baking powder
1 teaspoon salt
3 egg whites
2 tablespoons butter

Mix flour, baking powder, and salt together, then cut in the butter with a pastry cutter. You can also dice the butter up really small and mix it in that way. Put this mixture in the freezer for 5 minutes. Beat the egg whites until frothy, then add to the dry mixture and stir until just mixed. Pull out some and form into a biscuit shape, then place in pan and bake at 425 until golden.

A little won't hurt. You can use oil too.

Even though I'm trying to eat smarter and healthier, I normally abhor screwing with tried and true staple items like biscuits. Just reading "low carb biscuits" kinda pisses me of to be honest. HAVING SAID THAT - Those actually really tasty. I'll give em a shot. Thanks for sharing. thumbup

Wayyyyy cheaper if you order it on amazon or something similar. It still ain't cheap, but we use it for all kinds of stuff. Fried some fish up using it the other day. Who would have thought you could have low carb fried fish that was pretty dang good?

SBS I can't believe how good these were.

I don't quite understand the food science, without the gluten, I'm not sure how the texture is right, but it works really well.

My girls made a small batch of sugar cookies with it yesterday and they raved about them.

Kind of funny to me to have a low carb sugar cookie, they didn't understand why I was laughing...

Glad y'all enjoyed them! It's weird knowing there isn't any grain flour in there, but it sure helps those of us that need to watch carbs.

We do everything low carb, for health reasons. My wife uses Carb Quick. It’s easy and it’s like “Bisquick” for those who remember that. Makes it easy to pop out some quick in the morning. Ive been experimenting with low carb sushi, which I hope to post pics of soon (once I figure it out). We have all the ingredients in this post though and will try it very soon because they look so much better than the ones we do. Ours are “drop biscuits”.

So the almond flour rises like wheat flour when you add baking powder and salt?

Dang I may have to try some of those. Only problem, with the cost of almond flour, you're looking at about $2 per biscuit. Really though, I don't miss bread. Not yet anyway.

Amazon. It doesn’t go THAT fast. Nature’s eats 2lb bag is what we used to get. Like $12.
