1 cup + 2 tablespoons almond flour 1 teaspoon baking powder 1 teaspoon salt 3 egg whites 2 tablespoons butter
Mix flour, baking powder, and salt together, then cut in the butter with a pastry cutter. You can also dice the butter up really small and mix it in that way. Put this mixture in the freezer for 5 minutes. Beat the egg whites until frothy, then add to the dry mixture and stir until just mixed. Pull out some and form into a biscuit shape, then place in pan and bake at 425 until golden.

It's been so dang long since I've had a biscuit .... those look good. I'll have to go find some almond flour somewhere. Wayyyyy cheaper if you order it on amazon or something similar. It still ain't cheap, but we use it for all kinds of stuff. Fried some fish up using it the other day. Who would have thought you could have low carb fried fish that was pretty dang good?

SBS I can't believe how good these were.
I don't quite understand the food science, without the gluten, I'm not sure how the texture is right, but it works really well.
My girls made a small batch of sugar cookies with it yesterday and they raved about them.
Kind of funny to me to have a low carb sugar cookie, they didn't understand why I was laughing...
