So Mrs. Irish is making her pulled chicken cornbread dressing tonight for her big extended family get together tomorrow up on Sand Mountain. So I decided to make something tonight that was completely different than anything "Thanksgiving."
I browned some bulk mild Italian sausage in olive oil and then added onions, bell pepper, chopped fresh garlic, oregano, Italian seasonings, red pepper flakes, salt, pepper, and a few pinches of sugar.
I let all that steam for about 15 minutes and then added a quart of tomato sauce and pint of chopped tomatoes and some water.
Once all that was in , I just let it simmer for about 45 minutes while Mrs. Irish and I enjoyed some Martinis with garlic stuffed olives, dry vermouth, a little olive brine and some great Rocky Mountain Potato Vodka I picked up at the store today.
When I had let is simmer for a while I tasted it and it didn't need anything. So I put on the noodles and cooked them for about 12 minutes and tossed them in butter.
Mrs. Irish had made one of her great salads and warmed us some nice French bread.
