Been wanting to do something like that for awhile now. Post up the results with pics if you can.

Yeah, smoke to an internal of 150.
I found a 10lb pork belly at costco. It’s in the fridge curing right now. It should be ready for the smoke next weekend. Has to cure for 10 days. I'm wanting to do this also the next time I fire up the smokehouse to smoke some sausage. If you don't mind can you share your curing recipe with us? Thanks

I follow several cooking sites on Facebook. Since I have a Kamado Joe I follow their site. The link I posted is the method I’m following for the first go round. It comes highly touted and recommended. I may change up the seasonings and experiment on the next cook. Kamado Joe - homemade smoked bacon

I’ve been wanting to do this. Is it really better than the bacon you like from the grocery store?
Yeah c’mon. Daniel White

Dang did you use any wood for the smoke or just the lump coal? What was your overall cook time?
Only accurate rifles are interesting.

Dang did you use any wood for the smoke or just the lump coal? What was your overall cook time? I used chunks of apple wood for the smoke. Cook time was around 3.5 hrs. I was constantly checking the internal temp once it got close. I didn’t want to overlook it. Turned out perfect. I need to do another. I’ve given over half of it away as gifts. .
