Use as a substitute for potato salad
Cauliflower salad
1 head of cauliflower (steamed or boiled) to your desired texture and rough chopped
6 boiled eggs peeled and cut up
Mayo
2-3 tbsp. dill pickle relish
2 tbsp. onion
2 tbsp. bell pepper
(I run the onion and bell pepper through the food processor)
Salt and pepper to taste
Mix all ingredients together and serve. Even better after being chilled.

We do mashed cauliflower all the time, make like mashed potatoes for low carb option.
